An updated Australian take on aquavit. This is made in collabration with PS40, a bar and soda producer. During the R & D for the gins, Never Never found great flavours, but they wouldn't work in a gin. But when combined in an Aquavit, they sang. Caraway, fennel and dill form the spirit base with 4 other additional botanicals used. The results are a bright clean herbaceous liquid. Dill, caraway and fennel up front on the nose with nutty macadamia and soft myrtle traces. The palate is bright and herbaceous, classic dill and caraway developing into new world buttery notes of macadamia and spice. Anise develops later on. An incredibly long and complex, cinnamon myrtle and fennel extend across the back palate.
