Wolfburn, Scotland's northernmost mainland distillery, released its first single malt in 2016, and they have been making waves ever since. This award-winning whisky is made in a very traditional way with a long fermentation and slow distillation, while during maturation, the casks are stacked no more than 3 barrels high. Non-chill filtered with no added colouring, the distillery bottles and labels everything by hand all by themselves. The Aurora has been aged in a combination of different casks, both bourbon and sherry. On the nose, almonds and pecans, with a wave of sweet, sticky Sherry notes. On the palate, raisins, currants, more mixed nuts and fresh barley. The oak comes thorugh but more as an undertone. Lingering spiced finish. Great with a splash of soda.
