Founded by renowned bartender Yuki Yamazaki, The Japanese Bitters are the first bitters made with natural Japanese ingredients, and using a host of different techniques, including vacuum distillation. Hinoki is otherwise known as Cypress wood, which comes from the Tama area within Tokyo, also known as the forestry area. The wood is prized for its flavour and healing properties. Use this in cocktails with brown spirits.
