Montelobos Mezcal is a a relatively new player in the mezcal world, and is set up by Ivan Salaña, who has a background in molecular plant biology. Working with two families in different regions, they don't use wild agaves and practice sustainable and organic production methods. This mezcal is unaged, made using wild yeast, pit-roasted and traditional copper pot stills. Citrus on the nose with licorice, green peppers and spices. Nutty and earthy on the palate with hints of basil. Long finish. One to be sipped.
