With a history dating back to 1915, Dolin is the last remaining independent company still producing Vermouth de Chambry, a vermouth that can only be produced within France's Savoy region, and using the maceration of real plants rather than pre-prepared infusions. Dolin Rogue is a sweet vermouth flavoured with 35 different herbs and spices. On the nose, has lots of sarsaparilla and citrus zest, with undertones of clove and cinnamon. On the palate, stewed fruits, quinine and citrus balance out the bitter sweet sarsaparilla. The finish is long and slightly bitter, but has enough zesty citrus to feel complete. Great on ice or with soda. Try it in a Manhattan!
