Tequila is made from the agave plant, which is not a cactus, but a part of the lily family. The best tequilas are 100% agave, which means all the alcohol is derived from the blue agave plant. A blanco tequila has been kept on either steel or oak anywhere between one day to 60 days. Some producers do this for the flavours to mellow, or to add a touch of age to it (if aged in oak).
