Christ cake and Gin? No way! Yes, to make this gin, Four Pillars has distilled Christ cake with angelica, coriander, cinnamon and star anise. These are then mixed with their regular gin which has been aging in ex-scotch barrels that have previously held Muscat. Then, their own aged Muscat from ex-PX sherry casks is also added. Wow. What a gin. The nose has the hallmarks of juniper orange and Christmas cake. The palate has the richness of the Muscat and some PX raisin like sweetness. The juniper brings a freshness to the gin. Long finish. Serve neat or on ice, hopefully with a slice of Christmas cake!
