Four Pillars learnt back in 2015 the joy of savoury gins and having worked with Spanish distillery, Olives were a new and amazing botanical. So teaming up with Cobram Estate in Victoria they realized they could use olive oil as a botanical, alongside dried Olive Leaf. To amp up the savoury aspects, rosemary and bay leaf are also used. The results are a herbaceous gin with hints of bay and rosemary up front, earthy juniper, softly vegetal richness of olive, a touch of bright lemon and lavender tucked away underneath it all. Pair with East Imperial Burma Tonic and garnish with Rosemary and Lemon for a savoury G&T!
