Wolfburn, Scotland's northernmost mainland distillery, released its first single malt in 2016, and they have been making waves ever since. This award-winning whisky is made in a very traditional way with a long fermentation and slow distillation, while during maturation, the casks are stacked no more than 3 barrels high. Non-chill filtered with no added colouring, the distillery bottles and labels everything by hand all by themselves. The Northland is their first ever release and flagship expression, aged in second-fill Islay casks for over 3 year, which imparts a gorgeous, light subtle peat note. On the nose, you get big fruits and a touch of fresh sea air; traces of cereal and caramel, with a touch of peat. The palate is sweet with cereal, honey and nuts and an earthy peatiness. The finish is long and fresh with rich honey notes. A firm favourite!
