There are not that many aged gins around, because most gin lovers prefer the fresher aspects of gin. However, Elephant Gin doesn’t just age their standard gin here – they use the same 14 botanicals (but at a higher quantity) but with a different rye-based spirit, then age it for a year in three different oak casks. They then finish it in an ex-rum cask from Diplomatico for a few weeks. The wood softens the gin, but it still retains all the fresh character, with more vanilla sweetness from the wood coming through. Limited to 4000 bottles per run.
