Pronounced 'shee-na shee-na', this is a French orange liqueur that has been produced since 1875. It uses bitter and sweet orange peels, which are macerated and then distilled in an alembic still with plants, seeds and spices including gentian. Similar in profile to an amaro, this can be enjoyed after dinner or mixed in cocktails. On the nose, fruit cake with bitter orange peels and a raisin-like sweetness. A very complex palate of woody spices with liquorice and, again, bitter orange peel. A very long finish – strong on the orange and cardamon. Use as a bitters in mixed drinks – just a little will go a long way.
