Gonzalez Byass is the world's most famous wine and sherry (Sherry is classified as a type of wine). Sherry undergoes an extensive aging and oxidation process in order to achieve its unique flavour. A solera method is employed to marry the flavours and keep them uniformed. Also, a layer of yeast called 'flor' forms over the sherry has it ages as so to prevent oxygen from turning it into vinegar. On the nose, the Alfonso Oloroso shows intense warm and round aromas, with pronounced aromas of shell nuts such as walnuts, toasted, vegetable and balsamic notes that recall noble wood and dry leaves. On the palate, it is tasty and structured. There is a long permanence in the mouth and complex retro nasal aromas. Perfect with very cold with fatty meats and long aged cheeses.
