Founded in 1703, Mount Gay is oldest commerical distillery in the Barbados, and uses a combination of pot and coloumn still rums in their blends. This a newer version of the XO – using older rums, a bit more pot still rum in the blend, and aged between 5-17 years in American Whiskey, Bourbon and Cognac casks. The results are a touch drier and more complex than the previous reiteration. and the wood influences result in aromas of vanilla oak and cinnamon spice. There is caramel, figs and chocolate on the palate with faint salt notes, and it ends with a rich long finish with dries out beautifully. This rum was made for sipping, but there's absolutely nothing wrong with putting this in a stirred drink.
