Gonzalez Byass is the world's most famous wine and sherry (Sherry is classified as a type of wine). Sherry undergoes an extensive aging and oxidation process in order to achieve its unique flavour. A solera method is employed to marry the flavours and keep them uniformed. Also, a layer of yeast called 'flor' forms over the sherry has it ages as so to prevent oxygen from turning it into vinegar. Viña AB is essentially the Tio Pepe Fino, but allowed to mature longer (around 9 to 10 years, only half of which is under flor). Subtle and delicate aroma, with almond hints characteristic of the Palomino variety and yeast, as a result of its time under the flor. On the palate, it is pleasant with balanced acidity, a prolonged aftertaste in which the notes of dried fruit and oaken wood return. Serve cold with white meats, fish and curd cheeses.
