Gonzalez Byass is the world's most famous wine and sherry (Sherry is classified as a type of wine). Sherry undergoes an extensive aging and oxidation process in order to achieve its unique flavour. A solera method is employed to marry the flavours and keep them uniformed. Also, a layer of yeast called 'flor' forms over the sherry has it ages as so to prevent oxygen from turning it into vinegar. Made from the Palmino grape, the Tio Pepe Fino is the best selling sherry in world. On the nose, you get sharp and delicate aromas, very elegant, with a powerful bouquet of almond and fresh bread dough notes. On the palate, the almond returns, leaving a pleasant sensation of freshness. It is completely dry, with a long and complex aftertaste. Serve cold with cured meats, olives and cheeses.
