Gonzalez Byass is the world's most famous wine and sherry (Sherry is classified as a type of wine). Sherry undergoes an extensive aging and oxidation process in order to achieve its unique flavour. A solera method is employed to marry the flavours and keep them uniformed. Also, a layer of yeast called 'flor' forms over the sherry has it ages as so to prevent oxygen from turning it into vinegar. Nectar P.X Sherry is a Pedro Ximenez sherry, which tend to be considered dessert sherries because of its intense sweetness. On the nose, it offers extremely rich aromas, with a predominance of sweet notes of dried fruits such as raisins, figs and dates, accompanied by aromas of honey, syrup and candied fruits, accentuating the toasted tones over time. A palate that is velvety and unctuous, with an acidity that mitigates the extreme sweetness and warmth of the alcohol, and a very long and tasty finish. Enjoy with desserts and cheese.
