Founded by renowned bartender Yuki Yamazaki, The Japanese Bitters are the first bitters made with natural Japanese ingredients, and using a host of different techniques, including vacuum distillation. Umami, or 'savoriness', is a very desired taste in Japanese cuisine, and can really transform savoury flavours. To achieve this in the bitters, the producers use ingredients that are high in natural umami, namely kelp (type of seaweed), bonito flakes (made with a fish closely related to skipjack tuna) and dried shiitake mushrooms. Use this in a Bloody Mary, Dirty Martini or Old Fashioned.
